This is our first cruise ever. I understand that we will be assigned our dinner restaurant rotation upon arrival. We have four nights on the Disney Magic so I would assume we would get one restaurant twice. I was able to get us a Palo dinner reservation. We would have preferred a brunch time but they were all sold out. I know I can try to change this once we board. Will Disney see that we have a Palo dinner reservation and assign us the three restaurants for the other nights or is it possible we will get assigned only two of the rotation but have one of them twice?

No, the rotation pattern is assigned independent of whatever other plans you have, because the rotation is not just the dining rooms but your serving staff, whom you have throughout the rotation. So If you're eating at Palo, then you miss whatever that night's assignment is.

On a four-night cruise, the restaurant you're assigned to twice will usually be the restaurant you visit on Pirate Night. If you want to maximize your chances of visiting all 3 restaurants, you could book Palo dinner for Pirate Night. You can find which night is Pirate Night by looking at which night the Bibbiti Bobbiti Boutique does Pirate makeovers.

Can you only see this closer to your cruise? Or can I not see the BBB as I am not traveling with children?

Once your activity booking window opens, you should be able to see the BBB on the "Onboard Fun" section of the Activities reservation area, even if you're not traveling with children.

When we went on the Wish for the 4 night cruise, our Palo dinner reservation was for the last night. The request I put in for dining rotation was : 1923, Marvel, Marvel. I knew that Marvel wasn't going to be great but the main reason we took the cruise is because my daughter really likes Marvel. So, we didn't get to eat at Arendelle's. But we did have lunch there when we embarked and it was very good.
