No, its not every single night. But those are few. You can just check the calendar before you go. I usually google "wdw travel agents calendar" and then the month and year we're going.
We could see quite a lot of fireworks at AKL during our 2014 stay. We were on Kudu trail, CL room. I am guessing they were from HS but I never did quite figure out who's they were for certain.
You also cannot see the fireworks at each park from every resort.
The monorail resorts have views of Magic Kingdom fireworks.
The Epcot resorts have some view of Illuminations.
Coronado can see some of Illuminations and some of HS Star Wars fireworks.
I think you can see edges of Epcot's from Caribbean Beach. The Disney Springs resorts can't see fireworks, and I doubt you can at AKL and the Values.
We just stayed at AllStar Sports and we were able to see the Star Wars fireworks at DHS perfectly.
POP is well known for fireworks views. (AoA I assume has some views as well.) The bridge over Hourglass Lake has a view of higher Illuminations. Many areas have view of DHS fireworks. Some higher 50's buildings have decent view of Illuminations, and full view of DHS and Wishes (although Wishes is farther). One time we actually sat IN our room and watched all three through window.
Many Disney Springs higher rooms have views, some are even advertised as such. We have watched from Doubletree, B Resort and Hilton. BW advertises views and am sure Holiday Inn and Buena Vista Palace have views.
Yes, there are fireworks every night of the year at the Magic Kingdom unless cancelled by a weather issue (such as lightning). Epcot and Hollywood Studios usually have fireworks, and Animal Kingdom does not have fireworks (it will have a light show in a few months).
No, you cannot see fireworks from most resorts. Disney World is huge and very spread out. You can see MK fireworks from select locations of the Magic Kingdom resorts (Contemporary, Poly, Grand, Wilderness Lodge, Fort Wilderness), but that is not the same thing as seeing them from your window (it usually requires walking to your resort's beach area). There are relatively few rooms with those views from your own balcony (only certain rooms at the Contemporary, Poly & Grand), and they are very expensive. There is no better view than from inside the park, anyway. When people talk about seeing Wishes (the MK fireworks) from the value hotels(Pop Century or the All Stars), keep in mind that it is quite a distant view.
Just curious where you saw them from. Will be there in a bit over a month, and am curious. We want to see them our first night, non park, so if we could see them from the resort would be nice (we were thinking of just going to the entrance to HS).
