yes its a leg a thigh .... Also please note it was just me and 3 small kids (8,4,2) for lunch I had one my DS had another and my DD's both shared one plus we had left over noodles and green beans PLENTY for a lunch. My DH brings his lunch with him but most days he forgets and just eats when he gets home . This is his choice .
I will also say this when you HAVE to be on a budget the cut of meat become less important I would love this dish with Chicken breast but thats not in the budget ! Yes we have it on hand but its not used in ever kind of chicken dish I make .

As far as back bones in your dish ... I cook mine 4 hours in a crockpot then take chicken off thigh park and leave the meat on the leg part . It falls off the bone and is very yummy . THen I cook 2 more hours .

But yes for 11 pices of chicken leg quarters for 5.00 its a great price !

As far as the computer issue . Yes I run the household BUT my DH is a computer person and I would never think to ruin his toy . I am sure there is something in your household that Dh would not want to breaking (golf clubs , guns , fishing pole , boats , cars what ever it is I am sure you know ) .

Thanks!! I certainly didn't mean to imply anything with the "I usually eat breasts" comment. My dh LOVES dark meat, but my dd and I just cannot eat it. As a result, it is actually cheaper for my family just to buy breast meat. I know when you go to Boston Market you can order a "leg quarter" dinner, but I never knew exactly what that was.

My hubby loves the leg quarters I like the price of .20 lb but last two times i bought them they were bad so the store i get them at i stop buying them. I get the Grill Packs now for .39 to .69 lb They usually have 3 leg quarters and 2 breast halves. That will feed my family of 4, 2-1/2 meals.

I know, mac and cheese... not a good lunch, but I didn't get home until Midnight last night, from working, and I'm exhausted, so I went for the easy emergency backup lunch, that I keep in the back of the cabinet for just this reason.

Oh, I wish I had a recipe! I buy it, I use the generic brand from Walmart.

I once worked with a lady from Mexico that made the most wonderful enchiladas.. just heat up the tortilla in oil, fill with shreaded cheese and onion, and top with the sauce. They were so simple, and so divine! I never got her red sauce recipe though.

So, that is how I make it, except I add refried beans. I keep them warm in the oven. No onions tonight though. :)

Wicked hot today--dd7 doesn't have much of an appetite even though she's been in a cool house. I expect she'll make up for it tonight or tomorrow :goodvibes

Ds14 is at boy scout camp this week. Boy has that made a difference in the amount of dirty dishes :rotfl2:

I use the walmart brand and my family likes it . Last time we cooked it in a pot on the stove and about 1 cup of cheddar cheese (you could use any other kind if you wanted ) and mixed it up till it was all melted it together and pour it of them oh boy was it good that way .

Here is a basic Enchilada Sauce that i been using for years
my good friend gave me this recipe from her mother.


3 cups tomato sauce
1TBSP tomato paste
1/4cup water
2 green chillies
1/4 cup diced onions
1/2 tsp cumin
salt to taste
1/2 chili powder
Mix all on med heat until bubbly and then lower and simmer for 15 min. I would make sure to that the bottom of the pot is coated with pam or oil it seems to scorch on the bottom at times. Of course enchilada sauce in a can is cheaper then this verison but this one tastes great.

I have no clue but something around the house and I am sure it will not be that healthy . I was VERY sick last night and almost ended up in the ER so today I headed to my OB. I came home to a long nap and still feel off so I am not cooking ! But there is no money in the budget for take out so it will be something simple here .

You know, if you wrap your tortillas in a wet paper towel, and place them in the microwave for 20-30 seconds (depending on how many you are cooking), they come out "steamed" and soft. You can roll them for enchiladas without having to use any oil, thus making the dish much lower in fat.

Yes, I did know that. I can never achive quite the correct tecture though. The tortillas crack, even after "steaming" them. This is how I use to do it though, although I prefer the taste when I them when I fry them in oil.

Our microwave recently broke, and I'm currently out of oil, so tonight, i'm just going to bake them as is. Fingers crossed.

How many batches of enchiladas does this make? It looks like it would be equivilant to multiple cans of sauce. I will definately give it a shot! This version doesn't look that much more expensive, and I much prefer to make things from scratch, than to buy them.

This makes over a qt of sauce i can get about 4 trays of enchiladas 12 in each tray I like mine very saucy and i also use this as a dip with dinner for the chips. I make my corn and flour tortilla's from scratch and this seems to be great with them. I like idea i control the fat and salt in it.

If you baked them sealed in Foil they will be moist to they have to be sealed in foil if uncovered they will dry out.

I just got back from Lexington, KY late Tuesday night and am still kinda catching up so I haven't posted.

I wanted to make beef stew tonight, but it is SO HOT, I really don't want the stove on for more than 2 hours. :eek: Maybe I'll dig out the crock-pot tomorrow and let it cook all day for tomorrow's dinner.

I went to a farm stand today. I bought 12 ears of corn, 4 tomatoes, 4 peaches, 6 apples, and some cukes. TOTAL: $21 (It's expensive, but the quality is really great. The peaches actually taste like peaches). So tonight's dinner is going to be corn, tomato and cucumber salad, grilled chicken breast. I should have lots of corn left over for tomorrow (I think it is approximately $15 w/ chicken).

Breakfast today was cereal and milk. $1.25
Lunch: leftover tuna noodle casserole. Free (it was yesterday's dinner and cost $3 -2 cans of tuna, half bag of noodles, powdered milk, butter, flour, salt, pepper, water)
Snack: peaches and apples. $3.50

TOTAL: $19.75

We remodeled our kitchen last spring and added above the stove one I love the idea it's out of my way but now out of site out of mind Since i went to cooking everything from scratch i rarely use it now even reheating food is done either on the stove top or oven so it's really not used much which means less cleaning.

That's what I want. a hood/micro combo.

We're planning on moving in two years though. So, I have to decide how badly I want it. The next house will have one for sure.
