I'm really not picking on anybody. Just trying to clarify portion sizes and prices and I am constantly surprised on this thread.

Some things are really great and helpful - the parm zuchinni recipie and pickled carrots are inexpensive and good ideas. I'm planning to try the zuchini recipie next week.

Somethings vary from family to family and region to region and therefore prompt discussion when posted on a large community board. Prices and serving sizes are some of those things - for example - a scoop of tuna wouldn't make me gag - because I like tuna salad. But for some posters, a scoop is way too much! These differences are interesting.
 
I just told my husband we must not have any friends becuase no one is leaving bags of squash or tomatos on our porch. I'm actually having to buy the stuff!

Grow some of your own. No matter where you live zucchini and tomatoes are easy to grow in a pot don't even need a pot you can go to any bakery and get those 3 gallon containers for eggs they use.
 
Albacore tuna has a higher mercury count than dark tuna. One is better off eating the dark tuna.

That said, if we are fixing sandwiches for the whole crew there are at least 4 cans used. And then we add the mayo, liquid smoke, and stack on the tomatoes, and lettuce.

You are right about albacore, but I hate dark tuna. I can usually get "solid white in water" for $.99. I could probably do better with dark tuna and a coupon but I don't. As far as servings. One can of tuna will make 3 large sandwiches in my house. That's enough for the kids and me. DH would need more. I could stretch it by adding eggs (which I do like in tuna) so one can might be able to feed all of us depending on what else we have as a side dish.

I have made tuna casserole (with noodles) with 2 cans and that serves a family of 4 with leftovers for lunch the next day for everyone, and a little more left over next day (maybe enough for 1)

If I make BLTs for the family which i will tommorrow. I use one slice of turkey bacon per person and one tomato per person and 1/4 of lettuce per person and half of english cucumber for every two sandwiches , and it's on whole wheat bread or homemade Rye bread with no mayo but Mustard and horseradish.
Don't think anyone really misses the gobs of bacon or mayo and I know no one is starving in my house. Especially my 6'5 295lb husband.
 
Horseradish sounds yummy! We've been using Wasabi mayo lately. We make our own bread, also. It helps to fill them! We have the 5 of us, and an exchange student currently, and often have several spares.

I thought I'd post tomorrow's proposed menu. It's not set in stone....

Breakfast:
DH: free at work
Me: oatmeal (.10), orange (.25), tea
DS (6 years old): orange (.25), 2 cups of cereal (.50), milk (.25)
*total: 1.35

Snack:
DS: yogurt (.25)
*total: .25

Lunch:
DH: free at work
Me and DS: Leftover chili and cornbread (free, probably use up the last of it)
*total: free

Snack:
Probably cheap popsicles like normal. It's so hot in Central Florida! (.30)
*total: .30

Dinner:
DH has been bugging for some brats and saurkraut. So, brats (3.00), saurkraut(1.50), french fries (homemade, .50), green pepper (.50), onion (.25), 1/2 bag of frozen peas (.50)
*total: 6.25

Snack:
Probably strawberries (1.50)
*total: 1.50

Grand Total: 9.65
 
Ok someone mention we don't do recipes anymore so here it goes This is my late grandmothers recipe that she made weekly for 75 yrs Her mother made it and probably her mother to.

Spaggitti sauce
10 very ripe roma tomato's or 3 lbs
6 garlic cloves
1 white onion
2 carrots
1 green pepper
1 red pepper
3 bay leaves
1 tbs of dried oregon
1 tsp of rosemary
1 tbs dried basil
1/4 tsp of fennel
palm full of salt.
1 to 2 cups of chicken broth ( i use vegatable broth)
Dice the garlic tomatos onions and peppers shred the carrots put them all in a and broth in dutch oven add the dried spices on top put lid on let simmer un touched for 2 hrs.
(I suggest unless it's cast ironed and season you coat the bottom and sides with pam.)
stir and taste add pinch or two of sugar if needed but let cook another 2 hrs
serve with any pasta you like. and good home made garlic bread.
Now this recipe was translated by my aunt its written from her mom when she left Sicily that's what her mom sent with her as a young girl. I grew up eating this with biggest meatballs and the best home made spicy Italian sausage.

wow, that sounds so good, and it can be vegetarian, for the DH. I should of grown roma tomatoes! I will pick up some from the market next week.

Why i love it you can grow everything for this even the bay leaves and basil and oregano.

Plus from reading this thread I have learned I eat way to many snacks. I have to mention my other favorite from here is the chicken in the crock pot with barbeque sauce and a little water.

Here is a receipe I love but I really don't know if it is quite low cost enough for this thread but...
1. take a cake mix and mix with a can of diet soda (no oil, eggs etc) and bake as directed on the box
2. After the cake has cooled break it into pieces and layer in a bowl: cake, pudding (I do sugar free with low fat milk), cool whip and repeat. You can add in fruit, a crunched up butterfinger bar or whatever. (there was coupon in this weeks paper to buy a butterfinger and get one free and there are always ones for cake mixes so I guess this can be a budget dessert).

I really appreciate all the ideas/menus everyone shares. I finally went to the local Save a Lot today and was surprised by the prices. Like 3 Jiffy corn bread mixes for $1.00 as opposed to the 2 for $1 I get at the store I usually shop at.
 
Amyy, your post is too funny. We were thinking alike.

I made the zucchini & parm tonight also. Its for DH to try tomorrow. AND, I got the crockpot ready for tomorrow morning with ribs (still frozen), BBQ sauce, black pepper, garlic powder & onion flakes. I'll just start it up when I leave tomorrow morning.

I'll make a salad & rice to go with when I get home tomorrow night. Corn on the cob too if I think to pick some up.
 
yummy sauce . Thanks for the spicy carotts my dh will love them . Will have to make them after our next food shopping trip .

Dawn, I'm going to have to try those spicy carrot sticks for DH to snack on. He favors salty snacks, but his blood pressure is getting high, so I'm finding good substitutes. Those sound delicious! I won't bother with the spaghetti sauce, though, as I do that by the seat of my pants, too.

Was it mickeyfan that had the Amish farmer? I'm SOOO jealous! The local farm stand up here gets corn brought in a few times a day--the lady who runs it can tell you her source for everything she sells (not everything is local right now). Their corn can't be beat, and I could make a meal out of just a couple ears of it.

Amyy--I like SaveALot, too, they have good prices. We didn't like their frozen hamburger patties, though. They were our cheapest source for badon, if you don't mind getting the 15 pound box (I get this and split it up into smaller portions and freeze them).

Yes that was me. Once you eat their corn and produce you know what the good stuff tastes like!!!:thumbsup2

When somebody comes to visit during corn season we have to serve it to them every dinner.
 
That does it, I'm packing up the car and visiting you! Seriously, I would be having that corn every night--nothing says summer like real fresh corn on the cob!
 
And there's PLENTY of it! ;) Corn fields are EVERYWHERE in amish country. And corn is in EVERYTHING! :laughing:
