Favorite Quick service at the parks?

Yes, Jolly Holliday has lots of good options!....and you can always go for the mac-fest: matterhorn macaroons and mickey macarons!! (and lots of other goodies as well!)
 
I second White Water Snacks... its easy to get to from the California Adventure gate.We had cheeseburgers there once on Thanksgiving day!
Love the nachos too!

DL: Plaza Inn chicken, plenty to share, with an extra mashed potato, and side salad.

California Adventure:
Flo's V8 Cafe, or another vote for the sour dough bowls, with soup or salad.

Pacific Wharf Cafe is located between Cars Land and the bridge to Paradise Pier in California Adventure. You can't miss it. It's a huge seating area with three other restaurants on the main pathway.
 

DL: Plaza Inn for Fried Chicken (but we always order the pasta too and split between the 3 of us)
DCA: Paradise Garden Grill for the kefta (they call it the Spicy Meatball Skewer now) and make sure to get ALL of the sauces.
Downtown Disney: Earl of Sandwich for the Original 1762 w/ extra horseradish sauce
 
Another vote for the tomato soup and grilled cheese from Jolly Holiday at DL.

I haven't had good luck at DCA, but one time I had some good carne asada at the wharf. Can't remember the name of the Mex place there.

I know it's not high quality food, by any means....but I love the chicken fusilli at Pizza Port.

I also enjoy the fried chicken at Plaza Inn.

And the citrus chicken at Rancho del Zocalo.

Most of my old favorites no longer exist, sadly.

I used to love the broccoli cheddar soup at Pacific Wharf but the description on allears mentions green peppers which I don't recall it having a few years ago. Not sure if I'd like that.
 
Cocina Cucamonga is my favorite - though I may be biased because they have excellent options for egg/milk/peanut allergies. My daughter and I (and sometimes my Dad) usually share the chicken burrito. Yummy and huge portions!
 
Definitely Smoke Jumpers, love the condiments bar, I always take tons of pickles and bbq sauce for my burger!
