Favorite Non-Park Activities

I'm very early in my planning of our one and only WDW in 2016. We'll have 7 or 8 day tickets, but will be in the Orlando area for 10 days or so. I've heard there are a lot of things to see and do outside of the parks. What are your favorites?

We like to rent a boat at the Contemporary and enjoy a ride around Bay Lake. We also like checking out restaurants at the resorts. Turf Club is a family favorite.
