Favorite camping meals

I would like to hear what others cook while camping. We'll be in a pop up, but we do have a small fridge/freezer, a microwave and the burners that run off propane that connect to the camper.

I plan on bringing my crockpot and fixing a roast one night. I figured I could cut up the carrots, celery and potatoes the night before and then the next morning, all I'll have to do is throw it all in the crockpot and add a little water and a package of onion soup mix. Easy!

Anyone else care to share some easy meals?
 
Anything grilled. We even have a small gas grill and a small charcoal grill just for the camper.

I love to make cheeseburgers, barbecue chicken, and steaks while Andrea is inside makin' all the side stuff. I can just chill by the grill while the boys ride their bikes or play with new friends. Kids always make new friends at campgrounds.
 
I like to cook in the Crock Pot. We have chili, roast , BBQ chicken and spaghetti sauce. If we are grilling steaks I put baked potatoes in the Crock.

We cook and enjoy our meals in the TT just like at home and can't think of something we have done at home and not in the TT with the exception of fresh fish, but that is just because of shopping and not a cooking issue. We even did a 10lb turkey while dry camping for a Penn State football home game when our son was in the Blue Band. We only had to have it last one day so we packed it in ice in a large cooler and it did fine. Our new TT has a 17 vice 21 inch oven so the turkey is now out. For most trips the wife trys and make as much like spaghetti, taco, sloppy joe, etc. sauce at home and then freeze it and bring it with us.

We upgraded our 6cuft refer in the old trailer to an 8 and really liked it. This new TT only has a 7cuft so we bought the 75 lb Norcold refer/freezer and it has saved our bacon on this extended 40 day trip to WDW. It's a little pricey at close to $1,000 to double your freezer capacity, but size and wt./power requirements made it worth it for us.

So far this trip we have had as a sampling for dinner...

Lamb Chops
Prime Rib and left overs made beef dip for a late dinner one night:goodvibes
15 beansoup with/bone-meat from a shank ham that I bought and cut up
Steaks
Swedish meatballs
Ham Slice
Corned Beef
Pot Roast
Cornish Hen
Spaghetti
Lagsagna
Burrito
Pork Chops
Various Chicken meals both on the grill and in the Convection Oven
and a bunch of others.

We have now been in the TT for 32 days and tonight will be the second time that we have had hot dogs and haven't had hamburgers yet.


Wife has made

bundt cake
Spice cake
Various muffins and sweet rolls

I've made Omlettes and Harrison Hash for breakfast.

Mainly for Breakfasts

TheBigGuy likes to grill, but doesn't like to prepare...... at home, I'll take frozen chicken breasts, cut into 1" strips, plop them and whatever marinade I like into a ziploc freezer bag. Freeze.

At FW, just thaw, pull out the chicken, toss on the grill....yum!

Theres a RECIPES thread at the top of the camping boards...lotsa great ideas.
 
We'll take a few frozen 'dump chicken' packs. You put the sauce and the chicken in a zippy bag and freeze, then toss in the crockpot to cook. You can cook from a thawed or frozen state. I usually serve over rice.

We'll also take some previously cooked shredded pork to make bbq pork sandwiches and some Eastern NC bbq sauce. Since I moved away from eastern NC, I've had to learn to make my own.

For lunch, grilled cheese, pancakes, and pb&j.

I've just become hooked on the little pancake mixes that are in a jug and you just add water, shake, and pour. No measuring cup, mixing bowls, spoons, etc.
 
Boil a couple links of sausage for 15-20 min. Wrap it in bread and your done. It a simple hot meal. Little mess
 
I know this is so unhealthy, but my favorite meal at FtW is Hot Dogs 'n Baked Beans!!

I love to grill hot dogs - and for some reason, they taste better at FtW!

Of course, ya gotta have to go with it!!! :thumbsup2
 
Deb~Everything tastes better in FtW!!!! Everything also tastes better when it's off the grill.

A popular one with my kids is grilled mac n cheese. Take those foil loaf pans (everyone can do their own) put cooked macaroni in them, then have a sampling of shredded cheeses that everyone can pick and choose from, put a couple TBLS of milk in them, salt & pepper to taste, cover with foil and put over an open flame. These also work well on the edges of a campfire.
