For me, not having been to WDW yet, and being a very conservative person, I'd have to restrict myself to choosing among those attractions that existed at Disneyland last time I was there (1988) and which currently exist at WDW.
That still gives me a lot to choose from, but I'll say BTMRR. It's the one attraction I've ridden many times in a row and still loved it.
(If I could pick from attractions that I experienced at DL but which are no longer in existence anywhere, I'd choose the DL PeopleMover. My all-time fave ride, anywhere.)
First choice was Soarin', but then someone mentioned the TTA. That could be fun..to "experience" Disney throughout the ride.
Also, maybe the monorail loop between the resorts and MK. Just watching the people get on and off and really feeling that Disney excitement. "Please stand clear of the doors...Por favor (and whatever the rest of it is)" I can't get enough of that!
Hmm...this is a toughie. I can't just choose just one. I'll pick EE; even though I haven't been on this new attraction yet, I'm sure I'll love it when I ride it next year.
