FastPass + Scheduling

So my aunt and her family just came back from the World and they weren't completely satisfied with FastPass +. She didn't book her Fastpasses in advance and did them the same day in the park. From what she told me there are different categories for FastPass +. She told me you couldn't book rides such as Soarin and Test Track on the same day because they are within the same category of FastPass. Is this true or did she misinterpret? My mom and I are going in May so our FastPass + booking date is coming up soon and want to be prepared.
