This is my first time doing to wdw and having to use FP, so forgive me if it has an obvious answer that I'm not quite seeing.

I've seen mention that people will refresh their FP trying to get one they really want, like FoP. Can you do that when you have 3 FPs listed? Or do you have to keep one space open at all times in order to just search for those randomly available FPs?

You can do it with 3 by modifying one of the existing FP's. If you are wanting to search for FOP but already have Navi then you would have to modify that one as it is a tier 1 (attempting to modify a tier 2 while holding a tier 1 FP will simply not show you any tier 1 options).
 
For the most part, refreshing refers to trying to get a 4th FP the day you are in the park after you've used your first three. Day of inventory changes second to second where as inventory for advance bookings is relatively static (not saying that it won't change - but I'd never recommend sitting at your computer and trying for 30 minutes to see what pops up).

You can try to do the same method before you've used your three by trying to modify one of your existing FP but if you're looking for a Tier 1 ride, you can only do so by trying to modify another Tier 1 ride. For Tier 1s, you're much better off using your initial FP early in the day and and trying to get others for the afternoon/evening.

That does make sense. I'll have to remember that once I'm there. Thank you.
 
Also - a few other tips since you've said this is your first time there. If you cannot get a FP for one of the top tier rides such as FoP, I strongly recommend going at the end of the day. And I mean "end" as in if the park closes at 9pm, get on line at 8:45 or so. The wait will be significantly shorter than the rest of the day and the wait will almost certainly be only a fraction of what is actually posted because wait times at park close are inflated to discourage people from getting on line. Remember you only have to be in the line when the park closes - as long as you are - the ride stays open until everyone in line has ridden.

You can also do the same at the beginning of the morning but that would be my second choice for a new person to WDW as it's a lot more hectic and for some rides you have to get there a while before park opens to make it a quick wait (FoP, Slinky Dog, Star Wars, etc.). But for other popular rides below the crazy ones, getting there right at park opening will still allow you to get on a few with minimal waits.

If you're doing a full park day, I recommend getting FP at around 10, 11 and 12 so that you have the rest of the day to get other ones by refreshing. Lots of other threads that can give some more strategies depending on your particular plans.
