If I book my 3 fastpasses for the day and want to see if I can change times for a single ride. Do I have to give up the current time to look for a new time?

No, you can go in and request to change the time of a FP reservation. It will display other options (if there are any) and you can then choose to either make the change or keep the time your currently have booked.
