Fastpass + Booking - Can I do this ?

Here is what I want to do but I'm not sure if it will work.
Sept 6-10 , Staying off site
Sept 10-15 , Staying on site (not going to park on 15th)
I intend to go to Universal for 2 days which leaves 7 days of WDW parks visits.
In the coming weeks I will be buying Annual Passes (not to be activated until my arrival).
Sept 6 and 7 - WDW Parks
Sept 8 and 9 - Universal Parks
Sept 10,11,12,13,14 - WDW Parks.
(total of 7 WDW visit within 9 day period)
60 Days out, can I book all 7 days of WDW Fastpass+ (including the offsite days)
or
Do I have to wait until 30 days out to book the 2 offsite days,visits and then book the remaining 5 days worth of passes 60 days out ?
