What rides do I need to get fast passes for at disney world's magic kingdom?

That question is too vague. It will depend the rides you want to do, the age of your party, etc. There is a thread dedicated to all the fp+ information you should read.

that depends on what YOU want to do.

we absolutely had to have FP+ for 7DMT last summer BUT we were so disappointed that we won't be using a FP+ on it again nor will we wait in a long line for it.

for my solo trip in april i have chosen...
first MK day:
-jungle cruise (its closing for refurb before my second MK day so i want to ensure i get on it as its one of my absolute favorite can't misses)
-splash mountain
-space mountain
second MK day:
-BTMR
-splash mountain
-space mountain

splash and space are other absolute favorites so rather than stand in line i like to get FP+s for them.

We are getting fast passes for (traveling with a 2 year old girl and 5 year old boy)

1. Enchanted Tales with Belle (because the attraction itself is pretty long [around 25 minutes], so we don't want to spend any more time than we have to waiting in line)

2. Buzz Lightyear (because we'll be riding in the afternoon when lines are at their longest)

3. Splash Mountain (riding in afternoon with long lines-2yo won't ride b/c she's not tall enough)

We're planning to do Peter Pan at rope drop because that is a ride where the line builds quickly, but we don't want to use a fastpass because we want to see the new interactive que.

We're not planning to do 7DMT or A&E, but if you want to those, you will definitely want to get a fastpass.

i'm going april 12-16.

i haven't gone with a 3yr old in a few years now so its hard to say especially cuz idk what your 3yr old likes.

my niece was super into splash mountain when she was 3 so that would be on my list.

if your child like likes anna and elsa i'd definitely try for that although depending on your dates it may be hard to get one at this point.

if you think your child would like 7DMT which is a family friendly coaster and is tall enough then perhaps try for that but again depending on your dates that may not be a realistic option at this point.

if you don't plan on rope dropping fantasyland i'd get one for peter pan's flight since its always an outrageously long line.

but again it all depends on what you want to do.

My recommendations are in the green link in my signature.

I'm planning on 2 MK days. My trip isn't until October, but I'm already making plans. I made a list of the attractions in MK that would interest us and then I asked DD what things were "Must Do", Want to Do" and "If there's Time". That way I have an idea of what things to try and get FPs for. I'm sure my plans will change many times before we go, but right now these are the FPs I'm going to try and get.

Day 1 - Anna & Elsa, Seven Dwarfs, and BTMRR
DD will be 9 and itsn't into princesses anymore, but she's never met Anna and Elsa and would like to, but if I can't get a FP we'll probably skip it. She loves BTMRR so that's a must. And of course we've never ridden the Dwarf train and would like to. If I can't get a FP for this day, I'll try again for our 2nd day.

Day 2 - Seven Dwarfs, BTMRR, and and Space Mountain, then if FP are still available after we use those three, Haunted Mansion and then Jungle Cruise.
If I get a FP for Dwarfs train on day 1, I may or may not get one for this day. I'm sure DD will want to ride BTMRR again. Right now I have the third FP as being SM because my mother-in-law wants to ride it. I'm hoping we will be able to FP some other things like Haunted Mansion and Jungle Cruise to cut down on wait times.
