Fantasy timeline

I can't decide which week to go to Disney....we know we can't go prior to the last week of August. So that leaves the last week of August (before Labor Day), and anytime after until the week before Thanksgiving.

So I am wondering if anyone knows the Fantasyland timeline on when things will open. Maybe we can have good timing on something that is supposed to be open then?
