It is very easy to get a Fantasmic! FP later in the day, so I wouldn't use it as one of your three. That said, so understand that a FastPass for a show like that doesn't really mean you can show up later, just that you get to sit on the FP side (or you can choose the general side if you find the seating better). I usually snag one for safety so I can sit wherever is best.

I wouldn’t, you wouldn’t be able to get extra FPS throughout the day and it’s easy to get them last minute. I’ve gotten them several times right before the show

Last trip, I got FPs for the 8 pm show at 5:30.
Even with a FP, you still need to get in line 45 minutes before the show as the FP/Reserved dining seating line will be nearly as long as standby.
