Website is showing availability on Sunday 6th at any of the 3 restaurants
Also Thursday 3rd Nov, again any of the 3 are available.

You can book online here but you have to enter the date manually, month comes 1st - 11/03/2011 (either type or Copy & Paste)

I would think its too early yet, try the ADR calc http://pscalculator.net/pscalc.php can't book until 180 days in advance. Are you staying onsite? If you are you will be able to attach to your hotel and see dates before us without bookings but I think its still a little early for that.

I seen on the Themepark boards that its going to 5 nights a week. Can't find the thread atm though :/

There have been quite a few problems with Disney's online and phone reservation system with regard to booking the Fantasmic package, especially for October and November. They've been slow to load the dates and as a result it's been difficult to make reservations. You just have to keep trying.
