On a night where there's only 1 show, does F ever close bc reached seating capacity or are there always seats or standing spots in the back? Also if I have a FP and arrive right at show time or few minutes before, I know I might not get FP seating but will this ensure they would let me in no matter what? Thanks!

The theater does reach capacity somewhat often on nights with only one show.

If you have a FP+ for Fantasmic and arrive after the FP window ends, you've essentially forfeited your Fastpass. They open the FP seating areas to standby guests after a certain time. If the theater hasn't filled to capacity, you'll still be allowed in to sit wherever is
available, but if it's full, it's full.

1. Not only is that true on a night with one F! show, it can be true (at least of the first show) on a night when there are 2 (or 3) F! shows.
2. They don't hold back any seating or standing room if there are waiting guests. They will fill everything available until full and/or until show-time.
3. Because of what I said in #2 above, nobody will be admitted after all seats and standing room is filled.

The above fits the principle truism of WDW shows:
If seeing a particular performance is IMPORTANT, it is better to arrive far too early, than to arrive one minute too late.

No way of knowing for sure because it depends on how busy they are at the time you arrive. You might be seated early, you might still have to wait until your reservation time or you might be asked to return closer to your reservation. Keep checking online for cancellations.
