Fantasmic Dinner Package questions

So this is my first time ever going to Disney World and I'm going for my honeymoon! (woo! ) I'm trying to learn how the Fanstamic Dinner Packages work since my fiancee really wants to do that. Our trip is April 11th to the 21st and the Fantasmic Dinner Packages dates aren't out yet for our stay. Her choice of restaurant for the package is Mama Melrose's. When I check Mama Melrose's availability for the day we plan to be at Hollywood Studios it shows no tables available at all that day. Does that mean once the Fantasmic Dining Packages dates are released Mama Melrose's won't be available to choose?
