Fantasmic dining package?

Can someone explain the Fantasmic package to me? Is it a set price, and for that price we get an appy, main course and dessert? are there any menu restrictions? Do I pay anything when I book the package? I would like to eat at the Brown Derby, my kids are older than 9 so we will have to pay for an adult meal for them, but would we be able to sub an appy off the kids menu for them as they wont eat the appys on the adult menu?
