Family vacation time to plan.....

so how does december 1-8th of this year sound for a family of 6? We are DH-39/DW-31/DD-10/DS-8/DS-2/DD-infant. We are trying to avoid the scorching months of April thru October and the high crowds. Although Disney ALWAYS has crowds, I know! We are also wanting to stay on resort. Do we do two rooms at a value or a bunk bed suite at Animal Kingdom, Wilderness Lodge, etc.?
