I have checked out our options for staying onsite as a family of 6 and it looks like a cabin at Fort Wilderness or a suite at Art of Animation will work best for our budget. Which one is more likely to have a discount as part of a room/ticket package in the Fall/Winter? I know that sometimes they are excluded so if that’s likely, I’m up for other suggestions that are budget friendly. We don’t want to pay more than $500/night for a room.
 
Discounts have been few and far between of late, so I wouldn't count on one. Have a Disney travel agent book the resort you want more based on rack rate but tell them you're willing to switch when the deals drop. Then, cross your fingers and toes that something drops for one of your room options.

Alternatively, you can book two rooms on one reservation at Pop or an All Star. Not something you can do online, but a TA can do it for you. If you're 2 adults and 4 kids, they will prioritize your request for a connecting room, but not guaranteed. If you make that your only room request and you're booked under the same reservation number, your chances are very good you'll get connecting.

I highly recommend getting connecting rooms at one of the values or moderates. You have a lot more choices that way and you get 4 beds, most likely all queen size, and 2 full baths.

We've had connecting rooms at Port Orleans Riverside and Wilderness Lodge. Both times we had 7 people. 4 adults and 3 kids. It was wonderful having 4 queens and 2 full bathrooms.

Just make that your priority room request and you have a very good chance of getting it. At the very least, the rooms will be next to each other if not connecting.
 

Another option is rent DVC. You could do a 1 bedroom at Old Key West. You'd need to bring an air mattress for the 6th person. In January, a one bedroom is around $400 per night to rent through a broker. If you find someone on the DVC rental board here, it could be less. A 2 bedroom at Old Key West would be $560 per night via a broker. OKV villas are enormous, plus you get a washer and dryer and full kitchen with a villa. That might save you some money by eating some meals in the room rather than restaurants for every meal.
 
We do 2 connecting rooms at All Star Movies. Two bathrooms makes getting ready for bed and getting ready for parks so much faster. We leave one of the Murphy beds up and use that space for dining.
 
All Star Music also has family suites for 6 people, my family of 6 is booked there for March. We had also considered two rooms at Music or Movies.
 
I would check the price of an Executive Suite at the Swan.
Two queen beds and a sleeper sofa-- which in my experience, is pretty comfortable.
Also, two bathrooms, which would be a requirement for me and 2 mini fridges.

We booked an ASMu family suite for our April 2022 trip :-) Just want to comment that OP should be sure they are looking at current information if they search for reviews and floor plans. They are newly refurbished.

I was about to point out you can call disney and book the two rooms on one reservation (so long as there are only 1-2 adults), but then I remembered how long the hold times are these days...

Can you actually sleep in 6 in a 5 people bedroom?I ask you this cuz we have the same dilemma and my youngest is 5 she always sleeps with us and I find it a huge waste of money having to book a second bedroom just for capacity restrictions.

You can have one extra person in DVC rooms, but Disney will not provide bedding, hence the need to bring an air mattress. To fit 6 people, the room needs to already be set for 5. OKW, AKL, BLT are the resorts that have beds for 5 in a one bedroom. AKL and BLT have two bathrooms in the one bedroom. We did the AKL 1 bedroom and brought a twin sized air mattress. It fit in there with no issues.

I am under the impression the only way to have 6 people in okw is if one is under 3. Based on this post I tried to booked 1br at okw with 6 and got error message for too many people so it does not seem to currently work. Can you please confirm if you were able to book 6 somehow or are you referring to extra person under 3?

Yes, this.

We were able to book 5 in a one bedroom as DVC members last year during Spring Break.
 
Neither of those rooms get a lot of discounts. If you are spending most days in the parks, I would recommend the AoA suites over the cabins.

Many of the good neighbor hotels have suites that hold 6 for less than either of Disney's options. You can search for them through Disney's website and buy a package with tickets.
