Family member sick

We leave Jan. 26 and my Mother, age 65, has food poisioning. She thinks she will be too weak to travel and go to the parks. We booked our travel through AAA.
We have two rooms booked, but will need only one if she doesn't go and we have the DDP. Any suggestions of what to do if she can't go?

Prayers she will be better and well enough to travel. If she is unable to travel, could you take a family member or friend along??? I am not sure what the policy is if you change your reservation this late.
