I know the Disney hotels are limited in which ones are suitable for families of 5 or more. How about the Universal hotels?
 
We are a family of 5 also and you can put 5 in any of the rooms that hold 4 in any of the three hotels. You can either get a rollaway ($25.00/night) or do as some of us have done and bring an aerobed. Universal does not mind if you bring one. I pack my own bedding, but some have reported that the Universal properties gladly provide blankets and pillows.

Not a problem, as long as you have all five names on the reservation, you will get 5 keycards at check in.

Your only decision will be on your comfort level on how close you want to be to each other. RPR has the smallest rooms, PBH and HRH the larger ones.
 

I think the max occupency has to do with fire codes so the hotel does not necessarily get involved in the details of your sleeping arrangements. Since 5 in a room keeps them within code, you get your 5 room keys.
