My DF is leaving a day early during our free dining trip. Are the TS just tallied up daily whether you use them or not?

Yes, you should call and make a reservation. dining credits are for the entire stay. They are not tallied daily, and a lot of people plan so that they can "save" credits for a 2ts meal.
