My sister and family are going to Disney with us in September. Her 12 yo son (my nephew) has been before but this is the first time my niece 5yo is going. My kids are 14 and 11 so we are making plans where we do some things together and other things apart. I wanted to offer to them some "special" things to consider in the planning, but can't find much that both a 5 yo and 12 yo could both do. What am I missing?

They might both enjoy a fireworks dessert party, an evening on the Boardwalk to see the entertainment and play carnival games, Characters in Flight at Disney Springs or mini-golf?

The girl may enjoy Bibbidi Bobbidi Boutique. The Pirates and Pals dessert cruise is nice, if they like Pirates.

It all depends on what things they both enjoy.
There are the Pirate Adventure Cruises, where the kids get to go out on a 2-hour treasure hunting adventure. There's also the bead activities at Animal Kingdom Lodge where can go around the resort learning various different things like drumming, places in Africa, taking care of and about animals, etc, all at your leisure. As well as in park experiences like Agent P's World Showcase Adventure with the Play app around EPCOT and Wilderness Explorer's in Animal Kingdom.
Also, since you guys are headed down in September there is always Mickey's Not So Scary Halloween Party.

How about building a light saber or droid in HS for the 12 year old and BBB at MK for the girl? I did this for my kids in the fall. It was their “extra” thing that they were able to do in the parks. We didn’t do a dessert party or any hard ticket events. Building the light saber takes about 30 min, and our BBB appt was about 40 min.

SeaRaycer boats on the & seas lagoon...the 12 year old can drive with a parent and the little one can ride.

https://disneyworld.disney.go.com/recreation/motorized-boats/Sea Raycer by Sea Ray® – seats up to 2 Guests; $32 per half-hour

Climb aboard and have a blast on these mini-speedboats. Drivers must be at least 12 years of age and at least 5 feet tall. Younger Guests may ride as passengers. Maximum weight: 320 pounds. Parent or guardian signature required for all drivers 12 to 18 years of age.

Magic Kingdom dessert party or Cirque Du Soleil show at Disney Spring,

A fishing excursion is on my list for our next trip. That could be fun for both ages.

I would also consider an After Hours party at the Magic Kingdom. It would probably necessitate down time the day of and a late start the next day, which may not be okay for your trip, but we don’t mind. We just take the day off from parks and hit the pool and relax before hand. In April from the time we got in at 7 until we left at about 1:15, we got 12 rides and 6 meet and greets. We found it extra money well spent.
