Extending one more night......what to do

Our initial plan was to spend one day in MK park after our cruise vacation, booked a MYW package for one night stay at POP along with one day park tickets but now family wants to extend the stay for one more night. The price I'm getting for this extra night is little is little on a high side as falling on weekend. My question is, what happen in a situation if we cancel our room booking only and look for off-site property for both days rather than splitting. I can still cancel the package without any penalty but probably will also lose my FP+ bookings as have already booked them 60 days in advance.

Since you're only there 2 days, I'd try to stay onsite. It may mean changing resort, maybe one of the Allstars has a better discount? Book both days at same resort, I wouldn't split.
I'm thinking with only 2 days you'll want to make the most of your time and stay both nights at same resort, onsite. You'll loose any EMH staying offsite.
 
If you move offsite, I would book the new offsite hotel then purchase separate 1-day tickets and add them to your MDE account THEN cancel your WDW package. As long as you have a ticket attached in MDE, you shouldn't lose your FP+. Or, as PP suggested, look for a cheaper value resort and simply modify your existing reservation.
 
You'll lose your FP if you cancel your Disney resort reservation more than 30 days before arrival, unless you have another Disney resort reservation. Whether you have tickets linked or not.
