Exactly how accomodating are the restaurants?

We're thinking of dining at Le Cellier, but how accomodating are they?
The pork tenderloin looks good, but the sweet potato puree and the Apple Arugala salad look disgusting.
Would they subsitute the sweet potato puree for mashed potatoes and eliminate the apples from the salad?

If not, which is the most accomodating restaurant in Epcot?
 
I'm sure it wouldn't be a problem. I wanted the roasted Yukon gold potatoes instead of some funky kind of mashed potatoes that came with my steak. I asked if I could substitute and our server said it was no problem. They also very accommodating to special dietary needs as well. :)
 
Whew, thank goodness! This will be my first time at Le Cellier as well and I was a bit worried about the sides not to mention I don't like salad. I'm one of those people you see at Subway who get the roasted chicken with just cheese, lol. I'm a plain Jane, what can I say.
