We are going to WDW 11/22-11/28 and have a 6 day ticket. While I would love to go rope drop to close every day, I know it's not possible with a 7 and 9 year old. So my question is, which of the night time shows are the must dos and which do you think we could miss in lieu of getting up earlier the next day. We plan to get Christmas party tickets so we will definitely do MK one night.

You're going to get a variety of answers on this! Based on your kids ages and since you're already doing MK one night, I'd suggest Fantasmic. But if you have Star Wars fans do that at HS instead of Fantasmic.
 
I would highly suggest Happily Ever After at MK, Star Wars as HS, Fantasmic at HS.

If you have to skip some, first I would skip River of Lights at AK followed by Illuminations at Epcot. Illuminations is good so I'd still watch it if you can, but I think Hea, Fantasmic, and Star Wars are a must
 
Also, RD followed by an afternoon rest recharge back at your resorts can do wonder and then park for a late dinner and night time show.
 

How do you feel about "spoiling" the show, only for the adults? You could watch livestreams of Rivers of Light on YouTube, for instance, and decide if it's worth it for the kiddos to see in person too.
 
Happily Ever After and Fantasmic would be my two. If you have boys, maybe Star Wars at HS instead.
 
My kids prioritize them (13, 10, & 8):

Fantasmic- Seated, LOTS of live characters. Great storyline.

HEA- It's the castle but not terribly special. Projections are cool.

Illuminations- The globe is too far. It's just ok

Rivers of Light- "That was it?!!"
