As for FS1, don't think you will see it there as FS1 is a Fox network and I'm pretty sure that ESPN is not going to show a competing network in the their restaurant.
They bought 21st Century Fox but FS1/FS2 was not included, the local sports channels had to be spun off before they could acquire the balance of portfolio. I hope I'm wrong about showing Fox college games, but with all EPSN owns now I'm not sure why they would.

They do show sports from "competing" networks as for a specific game no clue. Last I remember if you did the reservation of a booth for the $100 or whatever it was they would change to what ever game you wanted (except pay-per-view which event by event).
Worst case you ask prior to the game and go off site to BWW or something.

We went in there last year because our room, at BWV, was not showing game/channel we wanted. We went to ESPN and they said they show everything. So I made an ADR for the 27th to see UMD football game. But FIL researched and says they don't show FS1. Don't know if he saw that on WDW/resort channel line up or specifically for ESPN. I keep calling and get no answer.
