Escargot at Chefs de France

Fell in love with the escargot on our anniversary at Chefs de France so now I want to add them to our Christmas Eve dinner, anyone make them at home a lot?

Do I need the little ceramic plates? How do you serve these little hot plates, will they crack fine china? Please share what you know if anything. All I know is I liked them, nothing else.
 
Many markets sell escargot in a little tray of 12 or something complete with the garlic butter in the fridge or freezer section. You just pop them in the oven and off you go.
I just made some from Whole Foods for dinner to see how they would be and they were wonderful! I do see all sorts of accoutrements and was wondering how necessary they would be. Turns out they can just be flipped on the plate and the buttery garlicy stuff doesn't bring down the Halibut so big win.
 

Escargots Bourgogne are dead simple to make you’ll be happy to know. Get a can of escargots, rinse well and stuff the shells with a mixture of butter, garlic, parsley, white wine, a touch of Cognac and breadcrumbs and you are good to go with no need of a specialty roasting dish. You can use a small sheet pan (quarter or eighth sheet) or a shallow casserole. Think your casserole dish is too deep? Ball up foil and lay the filled shells atop. FYI this also works for other roasted shellfish like mussels or oysters.

And although it's always a fairly pricy starter at any restaurant, canned escargot at the grocery store only cost a little more than tuna. :teeth: It's a really easy way to elevate a dinner menu at home. :goodvibes
 
I was just wondering where to get the snails, never noticed fresh ones in any grocery store before. So many questions. Do you all think the restaurants and WDW use canned snails too? Is there a good brand? Are the shells decorative?

Trader Joe’s or Whole Foods are good possibilities. I’m sure Chefs de France uses canned escargots. And the shells are not decorative; they will protect the meat in the oven.
 
So easy to make, picked up some of the dishes at a thrift store, canned snails, butter, garlic breadcrumbs. I want yo make them recently but couldn’t find snails in my supermarket (used to carry them), will be on the lookout.

Harumph, I am looking for escargot pans but they all look shallow and nothing like what was used at WDW, they were perfect. Some I see are ceramic some are metal but I can't have the plate too heavy or I won't be able to lift them, anyone have any they can recommend?
 
Has anyone on the thread tried the Escargot Casino at Hollywood Brown Derby? I had that last fall, and it was delicious.

Well sort of. Usually escargot doesn't go flying across the room. You eat it with a small fork out of the shell.

I’m rethinking my initial response….as long as the indentations for the snails are deep enough that the meat can be covered by the butter mixture it would be fine to cook without the shells. Using ghee from Aldi’s would make a fine substitute for clarified butter.

Thank you! You probably saved me from throwing a can out. How does one empty the digestive tract?
 
I love the cute pans but since we are downsizing to apartment living and not a house right now I probably should not attempt to squeeze anything thing else of volume into my life sigh...

While I was in Shoprite I noticed what looked like good quality 24 count mini muffin pan so I think this could work if I serve family style and also put out extra buttery garlic sauce, hmmmm, unless there is some super mini ladle.
