Hi, I did this last year and loved it. As you say, it is not like Discovery Cove, but I knew that and that's why I booked it. There are a maximum of 8 people in the group and you are then split into 2 separate groups of 4 people, once you are with the dolphins. You are first shown behind the scenes at the Living Seas, which in itself is worth doing, then you are given a little lecture (whilst sitting around the tank at Living Seas), then the bit what you've really been waiting for, interaction with the dolphins. It is so cool, you are shown where to touch the dolphin (and what not to touch), we spent roughly 20 minutes with one dolphin, then we swapped and did 20 minutes with the second dolphin. Just so you know, you do not actually 'swim' with the dolphins or get pulled along by them (the staff do not believe in this), but you are waist deep in the water. You get a special t-shirt (only given to people who do the tour) and a great photo of you and the dolphin. The whole thing lasts about 3/4 hours and all the money made goes to the Disney Wildlife Conservation Fund. It really is a great thing to do and I will certainly be doing it again.
