Epcot is easywdw's most recommended park today, but the line for Test Track at 10am is already 80 minutes? Soarin at 60?

That's the nature of that park. When you only have two rides that everyone wants to go on, monstrous wait times build quickly. Add to that Spring Break crowds and you've got the reasoning behind the long lines.
