Epcot or animal kingdom/hollywood studios

I am heading to disney in December. I have tickets for 8 days but for the first day I am thinking of I should do epcot by it self or do hollywood studios and animal kingdom. The reason I am not doing magic kingdom is because the next day I have tickets for the very merry Christmas so i am doing magic kingdom pretty much all day that day. So what do all of you think is better
 
I would probably do EP as it will be easier to snag FP+ for your first day in that park. FP+ for Toy Story Land and Pandora will be easier to get the further into your trip you plan those parks.
 
It depends on what your plans are for the rest of the week and the specific dates of your trip.

I would also do EPCOT. FPs for AK, HS for the popular rides may be easier to get later in the week. That has been our experience in other months. I suspect TSL may be similar to how FPs in Pandora have been. Although, so far, it seems peoples experience to get TSL FPs has been easier than expected. Hard to tell if that will continue.
 

I would choose whichever park you think will be least crowded. For example, if Epcot has Extra Magic Hours, I would avoid it. If it doesn't, I would consider it. And, why limit your pairing to AK & HS. Pair HS and Epcot if that makes more sense. You're there for 8 days, so you should be able to do about everything you want with solid planning.
