Epcot only trip...ideas?

We've decided to take a sort of last minute trip to Epcot the week of Labor Day. We're going to stay at the Yacht Club, and we'll be going to Epcot at least 2 days, maybe 3, staying at the resort for a total of 4 days. It's meant to be a leisurely, quiet trip, and I know a few things we'd like to do (there are three of us--me, hubby, and our 6 year old daughter). I want to pick a pearl at Japan, eat at Cape May Café, and eat at Beaches and Cream. Other than that, our plans are undetermined. Any ideas for fun things to do? Can anyone tell me about the Agent P game? Or the passport for kids activity? There will be no rope dropping or rushing around to ride rides. I'm looking for less obvious things to do that will still be fun for the little (don't get me wrong, we'll still take in a ride or two, but there will be no waiting in line for 4 hours to ride Frozen Ever After...). Thanks for ideas you'd like to share!
 
Our 5 year old twins loved Epcot. If you aren't into waiting in lines then stick to the showcases. The showcases from 4pm on are really nice, cooler and all lit up. My kiddos loved Via Napoli and the Mitzukoshi Market in Japan and Mexico. If you can catch a British Revolution performance, thats fun too. Other than that enjoy the pools at Yacht Club and take it slow at Epcot, lots to see.
 
There are live performances in nearly every country that are usually great! Try to do Deserts Around the World with your little one, and take some time to really check out Innoventions. I could also sit inside the Living Seas and watch the mantees for hours & there may still be tours that let you feed them. Lastly, consider the Behind the Seeds tour at the Land...it may be a little to knowledge based for a 6 yr. old, but is pretty inexpensive compared to most other tours.
Also, since you are so close, she may love walking over to the Boardwalk, and I would really recommend T-Rex at DS for a meal that has some entertainment.
 
Watch the 'serveur amusant' in front of France. Entertaining and funny!

The boardwalk is a great idea. Maybe rent a Surrey bike and ride around the lake.
 

Not in the park itself but you can go over to the Boardwalk for lunch time, sit along the water, have a slice of pizza or whatever you want, and just sit and relax and enjoy watching the boats go by and the people walking past you. Get some ice cream or candy for dessert.

You can walk down to the Studios and be like my husband and complain there aren't any wastebaskets or benches on the entire walk :) but if it's a nice day, your little one can safely run ahead on her own and you can safely watch her. You can see ducks and fish and plants and different things.

Inside Epcot - if it's a warm day, you can take a break in the entrance to the China movie. Very cool in there and displays so not that boring.

Explore the gardens of Japan

See the gardens of United Kingdom (between the main walkway and where the British Revolution plays)

Do the entire Living Seas pavilion and spend time just watching what happens in the water - and educate about manatees.

As others have mentioned, there are a lot of live performances in World Showcase and the very good thing about all of them is that you don't have to be seated when the show starts and you can leave whenever you want. So, you can have a nice walk around with food and drink and entertainment and not be in a rush at all.
 
When we go back, we're planning on spending two days at Epcot. Right now, we haven't fleshed out our plans but on Day 1 were going to ride rides in the morning and then see half of the World Showcase after lunch.

On day 2, we're going to ride the few rides we want to ride again, and then see the other half of the World Showcase.

If we had three days like you are planning, i'd split it up even further and relax more. Maybe break the World Showcase down into thirds and see a third each day.
 
We just got back from our trip and one of our highlights at Epcot was completing our passport! It's such a unique souvinear that really encourages you to make a memory at each pavilion in the world showcase! We bought our passport in the store in France, though I'm sure they sell it in any store in the world showcase. It was around $10. It comes with stickers to decorate each country's page as you visit them. And space on each page to get it signed and dated by a representative from each county! You just simply go to the "Kidscot" area in each country--they were really easy to find! The CMs are so friendly and write welcoming messages in their languages. I highly recommend it! It was awesome!
 
Let your daughter do the passport while you guys eat and drink around the world! Since you have multiple days you can really get a taste of the great food and drinks each country has to offer. Also, the agent P game is awesome. She will love it. It's like a scavenger hunt in a country and uses a device similar to an iPod/iPhone. Both of these will entertain her while you guys enjoy everything the showcases have to offer.

Go inside the Mexico Pavilion, get a Margarita from downstairs, and enjoy some live music:

with a 6 year old, try the agent p game. It's a walk around world showcase detective style game. If you have a smart phone you can use your own, otherwise disney will provide your child with an interactive device. It basically takes them around the world showcase looking for things and places and is rather entertaining. I actually recommend doing it when she's kind of had enough of epcot (like second day in epcot).
 
You should try the "Behind the Seeds" tour at the Land Pavilion. It's reasonably priced and something a little different! You could also do a "Candy Around the World" themed day where you buy one piece of candy from each pavilion and have some treats to enjoy when you are back from your trip :)
