My DD2 went to WDW for the first time in January. Her very first park was EPCOT. She loved it. The people, the color, the fountains, the sounds, the characters, the food. You name it - she loved it. She was thrilled to see the trolls on Maelstrom and still talks about them. She had a blast playing on the Viking ship, although it isn't like the Viking ships she is used to (we are re-enactors and our Viking group has a 38 ft. long ship being built for us, we had a 32 footer that my DD played in and a 20 foot faering that she is very attached to) but was cool nonetheless. China she loved for the food and the people. Japan had the kodo drummers and she loved the sounds. Morocco with its winding lanes and fountain was a delight for a 2 year old. Ice Station Cool with the different sodas was an experience. And don't get me started on how she loved Living Seas. Every child is different and you know yours best, but I honestly think that even a 2 year old can appreciate some of the things in EPCOT.
