EPCOT (Engagement Trip) Planning Help

I am proposing to my girlfriend on an upcoming quick (3-day) trip to WDW. One day (Saturday, December 10th) we are spending in EPCOT, her favorite park. I am working on getting some plans together, but I am hoping for some insight. My biggest concern is getting on Test Track and Soarin' in the morning without long waits.

08:00am - Candlelight Breakfast at Trattoria al Forno
09:00am - Test Track
09:50am - Mission: SPACE (FP+ from 09:00am-10:00am)
10:50am - Meet Disney Pals (FP+ from 10:50am-11:50am)
02:50pm - Frozen Ever After (FP+ from 02:50pm-03:50pm)
05:00pm - Candlelight Processional
07:25pm - Dinner at Le Cellier
09:30pm - Illuminations: Reflections of Earth

Where do I try to put Soarin'? We also enjoy Spaceship Earth and Nemo. I am trying to plan up to lunch (as efficient as possible), so we can enjoy the afternoon and evening relaxing in the Showcase.

I have been told that we won't get out of breakfast before park opening (likely)? Does anyone know if this restaurant opens before 8am? What if we get there earlier (if they open earlier)? We would then enter through the Showcase and head towards Test Track ASAP.

With an 8 am breakfast you would really struggle to be at the International Gateway for rope drop (8:45 am). I think from a wait standpoint you would be better off canceling the morning ADR, hitting Test Track first then on to Soarin (standby) then continue with your regularly scheduled plan. Hit FEA aty the start of the FP+ window then sit down for lunch rather than breakfast.

He should do it during Turtle Talk with Crush. Have Crush lead the intro before 300 anxious pre-schoolers.

Yeah - where? I'd pick Le Cellier - although ASAP would be good too because I could never make it all day with the suspense.

I can't change the reservation. It is for Candlelight Processional.

As for "the question"...I am actually doing that on Thursday night (before) during the Christmas Party...I am narrowing down options as I type this.
