Epcot day - can anyone help me plan?

I am just not very comfortable with planning our day(s) at Epcot. I have been there several times, but always feel like we miss so much. Love this park! Do any special memories come to mind of things you love to do and see at Epcot? We are family of three, with DS7. Thanks!

P.S. We will be there in a few days - last week of April....excited to see the Flower/Garden displays.....

We just got back from a quick one-day EPCOT trip during F&G.
