Epcot brunch menus--anyone have any?

We are changing our venues for the Mad Hatter Welcome brunch to the Wonders of Life Lounge at Epcot. I was wondering if anyone had any Epcot brunch menus or other good items from other places.

We currently have
Mickey waffles w/strawberries and whipped cream
banana stuffed french toast w/grand marnier syrup
cooked to order eggs/omelets w/toppings
carved bourbon glazed ham
bacon/sausage
fruit array w/honey dip
bacon cheddar grits
roasted potatoes
pastry assortment

Not that these don't sound good, but if anyone has any unique items for a Mad Hatter or ideas, I would love the help.

Here is the copy of the Tinker Bell brunch that we are using. We switched out the salmon for a cheese spread and are using that and the fruit for our pre-reception. They also let us add items to the omelete bar and to exchange the pasta for a different one that we enjoy at the Crystal Palace. I'm not a breakfast person, but I thought this gives our guests a good variety:coffee:

Tinker Bell’s Brunch Buffet

Array of Fruits, Berries and Honey Yogurt Dip
Smoked Salmon served with Red Onion, Eggs, Capers, Cream Cheese, Caviar, Dill and Bagel Crisps
Oven Roasted Yukon Gold Potatoes
Hardwood Smoked Bacon
Maple Glazed Pork Sausage Links
Seared Chicken Breast with Granny Smith Apples, Roasted Fennel and Fig Jus
Penne Pasta with Artichoke Cream and Julienne Vegetables
Eggs and Omelets (made-to-order)
To include Shrimp, Cheddar Cheese, Ham, Peppers, Onions, Mushrooms,Goat Cheese, Spinach, Salsa and Egg Substitute
Chocolate Hazelnut Crepes (prepared-to-order) with Caramelized Bananas, Mandarin Oranges and Raspberries served with Devonshire Cream
Croissants, Danish, Brioche, Cinnamon Buns, Rolls, Butter and Jellies
Assorted Pastry Display
Assorted Juices, Coffee and Teas

$45.00++ per guest
Based on 1½ hours or less and 25 guest minimum
Available for the 10:00 a.m. and 12:00 noon wedding ceremony times
 
Your brunch sounds fantasmic but I am alittle confused about it. We are also planning on a brunch but at Atlantic Dance Hall. You stated the cost for your brunch is for 1.5 hours. Is your brunch only 1.5 hours. I was assuming the reception would be at least 4 hours. What type of time frame are you looking at.

Sorry that was just copied over from the original PDF that they sent me before my planning session. Our pre-reception with the fruit and cheese displays is one hour and our regular reception is 3 hours. If I remember correctly the omelete and crepe stations run for 1.5 hours once the regular reception starts.
 

Thanks for clearing that up. I want to make sure that as all my guests are traveling from NY and NJ they have a nice reception to attend. Are you also doing drinks. I am not sure if I want just one signature drink or unlimited or billed on consumption. Not too many big drinkers in my group but I am sure most people will feel it is a wedding and they are on vacation and will want something.

No one in our families are big drinkers, so we're just doing the sparkling cider for the toast. It's two dollars per person. Plus, it will be so early in the morning we figured alcohol could wait. We are doing a dessert party that evening and might add some cocktails there.
