So, I want to attempt and do both parks in one day. Getting most of the bigger attractions (no shows). Which park first? Kids like star wars. Also, had an ADR for chef Mickey at 1pm. Could I still make that. Or, is there a better character meal we can do? FEA is not so important.

Why schlep all the way over to the Magic Kingdom resot area for lunch on a day when you're spending all your time in two parks that are basically next to each other ? I'd move Chef Mickey to another day , or Maybe do Minnie's Dine at Hollywood And Vine for dinner instead .
 
I wouldn't go all the way to Chef Mickey if I was spending the day at DHS and Epcot. I'd try to spend the morning at one park or the other, make the latest breakfast ADR possible at Cape May Cafe, and make that my stop in between the two parks, or as suggested above, dinner at Hollywood and Vine.
 
I would do a character meal in park instead. Look at Minnie's Dine for DHS if you're going late in the day (kids won't get Jedi Training Academy), or do Garden Grill at Epcot.
 

As far as park order, I would base it on which nighttime show you want to see. If you aren't interested in Fantasmic I would do HS first and then head over to EP and try to see some of Illuminations. If you would like to see Fantasmic you should start in EP and then go to HS!

If you want to attempt to sign them up for the jedi training, you must be there as early as possible and get right in the sign up line to have any chance to do it. But also HS has the star wars fireworks that happen at the very end of the night so if your a star wars fan, you might want to do some of HS in the morning, hop to epcot for lunch - dinner and hop back for the fireworks.

If I were to go ask my son Epcot vs. HS right now, he'd vote DHS all day, no contest. We were there pre-RD to post-close, and he wanted to go back the next day.
