Future World is open from 9-7 while World Showcase is open from 11-9, with Illuminations at 9. Epcot is generally open everyday from 9-9. EMH will begin at 9pm.
That being said, there are several attractions in Future World that will be open after 7. We just got back from WDW mere minutes ago and on EMH nights, nearly every Future World attraction was open until 9 except for Universe of Energy and Innoventions.
So officially future world is closed between 7-9 and reopens from 9-midnight? Right? Do you remember which rides stayed open between 7-9 or were you just lucky that night? Anyone else have the same experience?

Spaceship Earth, Test Track, Mission Space and most likely Soarin' will not close at 7 when the rest of Future World does (I recall TT being open until 10 PM on regular nights). And of course many of the stores will remain open as well

While I don't know about the Test Track thing on regular nights, katieeldr has the list. However, if you're going to Epcot on an EMH night, several other attractions are open until 9, including Living with the Land, Circle of Life, the Living Seas, Journey Into Your Imagination, and Honey I Shrunk the Audience. Since these rides are open during the EMH, I guess Disney just decides that it's better off to keep them open the additional two hours than have to close them and open them up again.
Of course, that's subject to change, but that was the way it worked for us on our trip a week ago.
