For the EMH for EPCOT evenings. Does this apply to both Future World and World Showcase.

Yes it does. Here is a list of attracrions that are open

Living with the Land, Mission: SPACE®, Soarin', Spaceship Earth, Test Track
Honey, I Shrunk the Audience, Journey Into Imagination With Figment, Mexico-El Río del Tiempo, Norway-Maelstrom, The American Adventure

For the EMH for EPCOT evenings. Does this apply to both Future World and World Showcase.

The thing to remember is that EMH never includes "all" attractions at any park.

So (as was posted) there are 3 attractions open in WS for evening EMH.
Río del Tiempo, Maelstrom, American Adventure
The other attractions are all in FW.

just page down and it will show you all the parks morning and night for now-september. Just keep in mind it can change without notice, though not often, they do change them occasionally so check again before you go.

Are the other countries and shops, restaurants, etc open, too? - or only Mexico, Norway and US? We wanted to wander through the countries, do some shopping and visit the kidcot stations that night - anyone know for sure if they stay open until midnite?

Don't count on it.

EMH are pretty SPECIFIC as being ATTRACTION-driven.
