Can anyone tell me what the dish Eggs Julia consists of. I can't remember and it's driving me mad.

Here is a recipe I found on the Web. - Mike
Eggs "Julia"

This recipe is best done one or two servings at a time. The ingredients are for one serving.

Ingredients:
2 large eggs, prepped for scrambled eggs
1-1/2 pieces of bacon, cut into small pieces, cooked crisp and drained (fry or microwave)
1-1/2 Tbsp sour cream (regular, light, etc.)
1 Tbsp (or so) grated cheddar cheese (mild to sharp according to taste).

Instructions:
Pour eggs into a frying pan on medium heat. Stir and cook until set, but not completely dry. Turn eggs out onto a plate. Spread with the sour cream, sprinkle with bacon, and top with cheddar cheese. Microwave for 50-60 seconds, depending on your microwave oven, until cheese has melted.

Serve with fresh fruit, and a freshly baked croissant or other yummy bread. An edible flower adds a finished touch.

Thank you for putting me out of my misery. No good to me unfortunately as I'm vegetarian but at least I know now.

Nope, that's not Palo's Eggs Julia.

It's an English muffin, topped with smoked salmon, then a poached egg, then Hollandaise sauce.

I make them from time to time to give us a "taste" of the cruise.

I've had Eggs Oscar one time at an on shore restaurant, and they were great. The recipe was similar to the poached eggs, etc. but with crab meat or something. I love poached eggs::yes::

I also thought there is salmon in the Julia.

I have a funny story about Eggs Julia.....One morning on the cruise my 13 year old son and his cousin go up to Cabanas and have breakfast by themselves. They come back raving about the Eggs Benedict....they said it was the most amazing they had aver had but they said it was called Eggs Julia instead of Eggs Benedict. I asked did it have something different on it and they said no it looked exactly the same and it was the best they had ever had. .....So my husband and I were going to Palo for brunch that day and our server was giving us the tour and showing us what was available and she showed us the Eggs Julia and said....which has smoked salmon instead of ham and I burst out laughing! I couldn't wait to get back to the room to tell my son what he had eaten. If he had known it was salmon he would have never eaten it. I think it taught him a lesson. Always try something because you just never know!! :)
Moral: Definitely try the Eggs Julia it is truly amazing! :rotfl::lmao:

Eggs Julia are found only in Palo, AFAIK. They are named after a former server there who now works in concierge (according to her and confirmed by a host at Palo).
