Eggplant Parmigiana, love it or hate it?

love it! as a matter of fact, we had some tuesday night for dinner.

I love it! I just bought a huge eggplant yesterday to make some! Only I don't fry my eggplant, I nuke it.

Like Towncrier, I always order it when I see it on the menu. The best place I've ever eaten it is Carinie's in Wildwood Crest. We go there everytime we go down the shore, just to get some to take home. Oh my gosh! Is it good!

I love Eggplant Parmigiana! In fact, my grandpa just made some so we can have it for our first night down the shore tomorrow. I'm a vegetarian, so I'll take eggplant parmigiana over chicken or veal anyday.
