Eggless cake recipe?

Does anyone have an eggless cake recipe they would be willing to share? My daughter's birthday party is in 2 weeks and my cousin's daughter is allergic to eggs. I want to have cake that she can eat so she won't feel like she's missing out at cake time. Thanks!
 
I have used these recipes for years. Both make a dense but rich & moist cake. If you can find mayo without eggs, it would work for you. I have used Miracle Whip and it works very well. You really can't taste the mayo...... honest! I particularly like it with a fluffy white frosting.

CHOCOLATE MAYONNAISE CAKE

1 1/2 c. sugar
1/2 tsp. salt
1 1/2 c. cold water
3 tsp. soda
6 tbsp. cocoa
1 1/2 c. mayonnaise
1 1/2 tsp. vanilla
3 c. flour

Bake at 350 degrees for 30 minutes. Makes one (1) 10 inch cake.




MAYONNAISE CHOCOLATE CAKE

2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla

Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.
 
Doesn't mayonnaise have eggs in it?

My son had an egg allergy for the longest time. On the back of some vinegar bottles and on the internet, you can find a recipe for "Wacky Cake." Sorry, I don't have it on me but just do a search and I guarantee you will find it!
 

Wacky Chocolate Cake

2 1/2 cups all purpose flour
1 1/2 cups sugar
4 1/2 tablespoons cocoa
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1/2 cup vegetable oil
1 1/2 tablespoons white vinegar
1 1/2 teaspoons vanilla
1 1/4 cup milk
2 tablespoons dark (or spiced) rum

Sift flour, sugar, cocoa, soda & salt into bowl. Make a well and add oil, venegar & vanilla. Beat on low speed for 30 seconds. Stop & scrape bowl

Add milk & rum. Beat on low speed for 30 seconds. Stop and scrape bowl. Beat on medium speed for 1 minute.

Pour batter into a greased and floured pan. Will make 1 10 inch bundt cake, 1 9x13 cake or 2 8" or 9" pans. Bake 50-55 for bunt. About 20-25 mins for the round and approx 25-30 mins on the 9x13 (test often for the last to make sure you do not over cook)

Obviously the rum cooks out completely! It just adds a bit more to the liquid and works to make sure it will rise correctly.
 
My eldest son used to be severely allergic to eggs


All I did for years was used Duncan Hines cake mix and minus the eggs.


That's easy and simple and it tastes exactly the same!!!!
 
You can also use plain yogurt in place of eggs in any type of recipe or boxed mix. Just use 1/4 cup of yogurt per egg. We really like it--it makes things a bit more rich and chewy and adds a very subtle tang which really enhances the cake flavor.
