Eating Paleo at Disney

Just wondering what advice you can give me. I have been Paleo for 6 months now and will be heading to the World in April. We are staying offsite and have a full kitchen. We'll eat breakfast before we go and most likely bring lunch items. Dinners will be split between our villa and going out to eat. Where are the best places for snacks in the parks. I'd love any suggestions for places to eat or other tips and tricks.

You might have to relax your ideals just a little bit in Disney, but you can enjoy paleo-like treats here and there. This is a great resource for all the menu's at each location: http://allears.net/dining/menu

We eat along the lines of paleo, excluding eggs and nightshades but at Disney we will cheat a bit. We found a beautiful fruit salad at Animal Kingdom at Tamu Tamu. It is a scooped out pineapple half - filled with fresh fruit.
You can find roasted almonds at stands throughout the parks, as well as fruit. Dole whips are dairy free (not sugar free!!) You can find sushi at various places, and some of the asian restaurants would be accommodating (Teppan Edo, Tokyo Dining, Nine Dragons) There are allergy friendly options for chicken nuggets at certain places..... And you can find a half roasted chicken at some places (Cosmic Ray's, Flame Tree BBQ) and Pecos Bill has a yummy build your own taco salad.
