to get a seat how long before the show starts would you need to be there?

It depends on the popularity of the show, but most times you can get a seat in the back at start time. If its someone you really really like, you may want to get in a line 30-45 minutes before to get closer.

Last year was the first year they did offer a package but from all reports I heard it wasn't very popular as it's not needed and people probably prefer to spend their money eating at the booths.The theater holds a lot of people and unless you want to be near the front getting there 30-45 minutes before the show is fine for most groups.Many people don't even make the line and just watch the show from behind the theater or wait until the line is totally let in when they open the ropes to everyone else not in line.The first show is the most crowded and the last is the least crowded,here's the list of performers this year.

Eat to the Beat is a series of concerts that is free to anyone who goes to Epcot on that particular day. Which means you need to have admission to Epcot. For the shows, the American Gardens Theatre (in America) opens about 15-30 minutes before the start of the show. For some acts, there could be lines starting hours before the show (Boyz II Men is one of those) but you can just stay outside of the queues (there will be queues) and wait until the ropes are dropped and the lines are let in before you join the crowd.

There is a plan where you can have a meal at one of the restaurants and be let in through the second queue but you don't have to purchase that extra plan. We never have but have seen lots of entertainment. For people who do the other queue, that's where the line can get long but we ust wait until it starts moving and then join when it reaches a point where we can stroll in.

Like I said, the "stand by" queue can get long (sometimes into Italy, like with Boyz II Men) but we have waited (with Boyz II Men) until the last minute and ducked in and gotten seats in the back. But, we are just two people and just want to hear the music, not see the band every second of the performance.

If you don't want to go into the theatre, you can hear the band from outside and there are many people who just sit along the fountain in America or at the outside part of the counter service place and listen.

But it is all free.
 
The longest line I've seen was the Beach Boys who had the line reach Germany then turn around and go back to the American pavillion and then turn around again and reach Italy,and all those people got in,it's amazing how many people fit in the theater.
