Eat at home

I'm having surgery (gallbladder) in approx. 2 weeks (will know tomorrow) and I'll be laid up for about 3 days, so I need meals I can freeze and DH can throw in oven to heat up. I will need about a week of meals to freeze, because even if I'm up and around, I'm not going to want to stand around prepping.

So far I have: pasty's and cheesy ham hashbrown casserole (thanks to another poster on this thread!). My Dh can make a great homemade pizza and salad, so that won't be hard.

I won't be able to eat this food, but I thought it would be good for the family. I'm making myself a big pot of chicken noodle soup with celery.
 
1 Teriyaki Pork Chops (not cooked, ready to grill)
2 Teriyaki Chicken (not cooked, ready to grill)
2 Twice Baked Potatoes (6 potato halves per meal)
2 Balsamic Marinated Chicken Thighs (not cooked, ready to bake)
2 Chicken Enchiladas
2 Pork Lo Mein
2 Beef Goulash
2 Skillet Stroganoff
2 Shepard's Pie
2 Meatloaf (not cooked, ready to bake)
2 Marinated Pork Chops (not cooked, ready to grill)
2 Marinated Fajita Steak (not cooked, ready to grill)
2 Spagetti Sauce
2 Chicken Pot Pie (just the filling)
2 Chicken Lo Mein (veggies added during reheat)
2 French Steak
2 English Pasties (8 pasties per meal)

AND 4 Apple Pies ready to pop in the oven.

Many of the recipes came from a book called Don't Panic - Dinner's in the Freezer. It was recommended by the blogger that gave me the idea. Also, we'll need to add/cook veggies for serving night, but most of the work is done.

Just yesterday, I was able to get boneless chicken breasts for $1.87/lbs, so hopefully this weekend, I'll be adding the the list.

I ordered that book and a book of recipes about making mixes (like cake mixes, and such). Can't wait to get them! :)
 
Changed the menu today. My BFF called and asked if I could watch her daughter today so we are going to make crescent hot dogs with sauteed green beans, sweet potato fries, and orange slices for dinner.

Tonight did not go as planned. Our air conditioner has been acting up and I spent the day with my Uncle trying to clean it all out and see what was wrong. So as a thank you to him we ordered pizza using a gift card we had. We will have the cheesy ham and hash brown casserole tomorrow night.

I think I will run by the local orchard after work, the sign went up last week that peaches are now in season...YUM!!!!
 
I survived three trips out of town in three weeks time! Now, to get back on track with eating at home! I even spent the afternoon making stuffed peppers so we wouldn't cave to take out on our crazy Tuesday this week!

Monday- Taco salads, fresh fruit
Tuesday- Stuffed peppers, corn on cob, fresh fruit
Wednesday-grilled chicken, salad, fruit
Thursday-Blueberry pancakes, eggs, fruit
Friday-salmon, roasted red potatoes, corn on the cob

Can you tell me how to make smothered burritos? Sounds really good!

Last night my cousin and I went out to Maggianos. OMG SOOOOOOOO good. When I visit, it is a tradition to have one of our parents watch her son and then we go out just the two of us. It was the first time at Maggianos for me, but we WILL be going back next time I visit.

I need to work on my menu for next week. My break from cooking will be coming to an end here soon!
 
Can you tell me how to make smothered burritos? Sounds really good!

Basically it is taco meat and cheese in a burrito with a little of the "sauce" in with it. Roll them up put them in a 9x13 pan then top with the rest of the "sauce" and more cheese. Bake at 350 for 30 minutes. It was a new recipe, but we all loved it.

Sauce:
1 can cream of mush soup
1 cup sour cream
jalapenos to taste (we don't like spicy, so I subbed a sm can of green chiles)

Dinner tonight:
Homemade Calzones
Sautee'd Whole Green Beans
 
We are in Alabama at the inlaws house FIL in hospital so a quick unexpected trip. We are going to beach next week, so I didn't want to spend this week eating out too . MIL fridge pretty packed so made do so far.

Saturday night eat out
Sunday night Home made general Tso chicken and broccoli with rice
Monday night Paula deen's farmers porkchops... very yummy, but more of a comfort meal for the winter time. A little heavy for 100' weather.
Tonight , spiral honey baked ham and tater salad , tomato, cucumber salad.
Wed drive home, stopping at publix for sandwhich meat... I love boars head and can't find at home !! Picnic on way home , and I will pull meatballs and marianara out of freezer.

Thursday , will have to see what is on sale in the ads when I get home.
 
Tonight we are having pulled pork (from the freezer), sweet potato fries (from the freezer), and sauteed corn (from the freezer).
 
We had soft tacos (beef) tonight with lots of ingredients. Avocado slices, sliced black olives, diced tomato, lettuce, sour cream, shredded cheese. Very good. :)
 
I need to start meal planning- I feel like I make the same things all the time and it's getting boring. Our grocery bill is out of control and I need to rein it in. There are 3 of us- dh, myself and ds 14 (who has recently turned into a food vacuum) dd 21 is here sporadically so that makes it hard to plan on her.

Tips?
 
Some of our company has returned but not enough for me to have to change the menu. I'm going to New Orleans for the night but am making a pot of red beans and andouille for the guys to have this evening. I'm going to wait and see who'll be here when I get home before I make any more plans!
