Tamale Casserole was BIG HIT in our home last night. With three children and a hubby all with different ideas about what is good, that is quite an accomplishment! I would never have the time (or patience :scared1:)for the homemade tamales, so this casserole is a great alternative.
 
Yum...looks good! So, if I wanted a somewhat thinner crust, do you think one box of cornbread mix would still work okay? I LOVE the idea of cooking it in my cast iron skillet, btw!
Oh, and your taco salad looked good too. My family loves tacos and I usually try to find ways to stretch a lb of ground beef instead of using 2 lbs for them. Recently I have made beef and bean burritos. Love the idea of adding the black beans.
 
I am so glad I found this thread!! So many great ideas and this perfect for my BFF who's family is coming on there first WDW vacation with next summer and she wants ways to save...eat more at home...was my first piece of advice and now I have you guys to back me up!! Thanks!

Our week looks like this...
Chicken Fajitas
Pasta with meat sauce & biscuits
Cheeseburger & Fries
Chicken Salads (with left over chicken from the fajitas)
Chili & Cornbread
and leftovers of whatever, as I will be getting things ready for Easter!

I am making corned beef in the crock pot and will have mashed potatoes and corn on the side.
 
Corned beef...mmmmm! Wednesday evenings are busy for us. I get off at 4:30 and here is the gauntlet we run: homework, pack lunches for the next day, dinner, baths and be at church by 6:30... :scared1:

All that to say dinner tonight is-
Chili Dogs and Chips
It's not healthy or nutricious AT ALL, but it is what it is ya know? :rolleyes1
 
Tuesday night ended up with sandwiches and bloody marys for the big folks.

Dinner last night was the Crispy shrimp pasta and green beans. Ok but prob wont make again.

Tonight is rotissarie chicken, smothered potatoes and roasted broccoli . Im hoping to have enough left over chicken for chicken salad on Friday . We are going crabbing and would love to bring chicken salad sandwiches. If we eat it, all I guess Ill just go grab another one, they are only 4.50 , cheaper than buying chicken salad in the deli . I think it is running about 6.50 a lb, it is yummmmy , but I need more than a lb for the crew that is going.

Saturday is boiled crabs if we catch, if not Ill throw a ham in the oven on Saturday morning , potato salad , rolls and roasted asparagus .

Sunday is boiled crawfish and lots of Easter goodies.

It is tons of fun, if you don't mind a little sun and raw chicken LOL. Good Friday crabbing is a tradition in my family, the chicken salad not so much , but it is what it is this time , if they don't want to eat meat they will have to bring their own PBnJ or tuna salad. LOL.
 
So far this week we have been doing really well. Tonight I am making chicken with rice and veggies.

Tomorrow will either be pizza or mac and cheese
 
Okay- tonight will be a hard one to not go out to eat. MIL is taking the kids home with her for a few hours this evening. :woohoo: I need to go shopping after work to find an Easter hat (a friend at church is battling breast cancer so all the ladies are wearing hats Sunday to honor her). SO- shopping then home to cook :scared1:...it would be SOOOOO much easier to grab a bite. But I WON'T do it. DH and I will have a home cooked meal:

Beef and Noodles (leftover Italian Beef in the freezer)
Garden Peas
Dinner Rolls
 
Questions for the "couponers" in the bunch:

What are your go-to websites for online coupons?
Are you able to search for specific items to see if there are coupons available?

I shop at Aldi's, so coupons are not necessary there since they sell their own brands at rock bottom prices. However, inevitably there are always a FEW items I am unable to get there, and I would LOVE to be able to coupon those items at Walmart or Kroger.

I am not particularly interested in planning meals around coupons or sales, since the bulk of my purchases are at Aldi and I just prescribed to a meal planning program with Aldi as my store of choice.
 
I use aldi for baking supplies, produce and their frozen desserts/novelties/ ice creams are great!

Couponing is new to me- I just started in the fall of 2010 but my goto spots are couponmom.com

try googling a coupon blog in your town- they will likely help you in matching coupons to the local stores/sales.

another source is to go to your favorite local store(other than aldi) and look to see if they have a coupon link- that will often launch you onto a coupon site to print coupons.

When it comes with the individual manufacturer- setup an extra junk email to use so you can register on your favorite brands. You will get emailed coupons and specials.
 
Last night I made a recipe out of my Taste of Home cookbook which has really easy to make recipes, it was Chicken & Mushroom casserole, with a can of mushroom soup (I used a chicken/mushroom combo that I just bought) it called for some canned mushrooms but I left those out, my kids don't really like them, it also had sour cream, and then I added spices. I browned the chicken tenderloins (it called for 1/2 breasts, but I didn't have any, so I subbed) then mixed the soup/sour cream/spices and poured that over the chicken and baked for 20 minutes on 375. I made rice on the side and frozen veggies, it was delicious and easy and fast!! Today I'm making something in the crock pot with a chuck steak that I have, have to look up recipes...any ideas??
 
Try Hotcouponworld. Under coupon forums you can find the store of your choice - Publix for me. That weeks ad is listed with the coupon match ups. If it is an online coupon, the link is usually available to print it. I think it is great and it is totally free. I know there is a section for Kroger as I sometimes shop there too. Walmart not so much as they don't have a weekly sales ad.

None of the stores in my area take internet coupons! So I rely on the store coupons and manufacturer coupons out of the paper. Saturday is double double coupon day so I am getting together the 10 coupons I want to get for free or close to it. They double the value of 10 coupons up to a buck. On Wednesday I got two packages of that Kraft Homestyle Mac and cheese for free.
Today I ate out on a Groupon for sushi lunch. Check out my blog for food porn!
