Last night we had sausage and peppers with homemade sub rolls:cool1: My kids couldn't believe I made them! woohoo!!

Tonite will be something simple- either hot dogs and fries or chicken cutlets and rice. I'll see what everyone is in the mood for

I saw a recipe for a Frittata that I want to try too. I bought ham steaks with a coupon I had and am thinking of dicing it up into the fritatta? What do you think?
 
So, we had a change in plans. I was home with a sick little boy yesterday, which gave me time to make something that took more time...we had the baked mac and cheese with cubed ham and green beans last night. Tonight we will be having the blueberry pancakes and bacon...yum!

I am already planning next week's menu and I have a question for the extra frugal cooks in the bunch:
Does anyone have a recipe for stir-fry that uses ramen noodles? (preferrably meatless) :confused3
I am trying to get creative. I have made veggie fried rice several times lately and thought I would change it up and use noodles instead.

Menu for the remainder of the week:

Wed-
Blueberry pancakes
Bacon

Thurs-
White bean and bacon chowder
Cornbread muffins

Fri-
BBQ chicken and black bean burritos
Chips and salsa
 
Dinner is off for tonight. We're going to renovate my FIL's house to get it ready to rent and the demo people are here right now with hubby. No idea when he'll be done and that doesn't really work with fish. Glad I found out before I took the tilapia out of the freezer!

I'm eating cereal, DH will probably have a sandwich. It's a lot easier when you don't have kids to feed.

I'm not going to take a picture. Just imagine a bowl of granola with sliced strawberries on top, 'kay?
 
I love cereal for dinner. It doesn't happen often though but a nice bowl of my favorite cereal in my jammies in front of the tv is so comforting. I only get to do that if the kids and hubby aren't here. They like to eat actual dinner at suppertime!

I have a ramen noodle cookbook somewhere that may have a recipe. I will look later and let you know if I find one.

Tonight we ended up having grilled cheese with tomato soup as my allergies were acting up and I fell asleep. It was too late when I woke up to cook it in time to eat before 9pm, so after dinner I cooked it up and it is in the fridge ready to go for tomorrow night.
 
Jumping in here, Hi everyone!

I'm getting ready to have my *big* shopping trip and do my monthly meal plan this weekend. It's really the only way to stay on budget and not go to the grocery store a million times - for me anyway! Anyway else do a monthly plan? I rarely stick to it all the time but it's handy to have a backup meal. :)
 
I can't shop once a month! How do you manage your produce? It seems like I'm headed out to the fruit stand at least a couple of times a week!

Im ready for the farmers market downtown to really get cranked up with summer veggies. If I didn't live so far out I would be at the Perkins road one and downtown every week .. Think they have one on Goodwood on Tuesday. With gas prices so high and my giant gas guzzler , I will prob keep my visits down to once a month : ( . We have a market out here on Saturdays in Denham, but it isn't as big and the selection is pretty basic. Im covered for all that with my own garden.

TinkMom, that looks yummy. I am off to Target for my bi weekly trip , might have to add gnocchi to the list lol.
 
Downtown is a long way from Denham, I've never made it to the one on Perkins on Thursdays. I go to Red Stick sometimes but tend to just run to Southside. If it doesn't rain we're putting in the garden this week-end. I've pulled up everything but some lettuce to get it ready. We'll have to do something about the fire ants first. Those things LOVE my garden!
 
Got up this morning and got our White Bean and Bacon Chowder going in the crock pot, it is a new recipe so I hope it's good. It looks like it will be with the beans and bacon, celery and onion, carrots and potatoes. I just love the crock pot- work all day and when you get home it smells so yummy and dinner is already ready!!! :woohoo:
 
Finally managed to cook an actual meal-tilapia, pilaf and peas. Wasn't feeling healthy tonight so I pan-fried the fish instead of baking it :rolleyes:

The sour cream noodle bake was so yummy. I am going to be trying even more of her recipes now. We have plenty leftover for another meal plus I served it with a warm spinach salad.
 
So here it is Friday and I just realized that I had forgotten to post our weekly menu lol!! Mommy brain what can I say :confused3 Anyway this weeks menu included:

Monday: Chili dogs and salad
Tuesday:Chicken Stir-fry
Wednesday: Leftover Chili
Thursday: Steak Alfredo and Green Beans
Friday: Hamburger Gravy over rice with Carrots
Satuday: Leftovers
 
Change of plans!

Since I fried last night I'm not doing the chicken today. We're having spaghetti w/meatballs instead. DH and I ground up some super lean bottom round for ground beef and this will be our first time using it.

Tonight will be:
Spaghetti/meatballs
Ceasar salad
Garlic bread

I'm using canned sauce (Hunts was on special $.99/can and I had a coupon!) that I doctored up with tomatoes (canned-fresh are crazy $$$), onions, peppers, garlic, red wine, red pepper, basil, frozen spinach and fresh oregano.

Did you use Cottage cheese or cream cheese? I am dying to try it and I can't decide which to use.
