This is what I made for dessert tonight

Your blog is great and that dessert looks incredible.

Today I have friends over and we are having sloppy joes with chips and fruit for dinner.
 
My son (the one who likes to cook) and I sat down and planned meals for the week. We are going to have:

Today (already in the oven) Polenta Lasagna with mushrooms, spinach, marinara sauce and a "cheese" sauce made with no cheese.

Tomorrow: stuffed portobello mushrooms with salad and asparagus

Tuesday: frittata (made with tofu and lots of vegetables)

Wednesday: samosa pie (samosa filling - sweet potatoes, peas, green beans, and spices) baked in double pie crust, with a salad

Thursday: no-meat loaf (new recipe I haven't tried before - a loaf made with lentils, a little silken tofu, breadcrumbs, etc., and served with mushroom gravy) Probably salad too.

Friday: cabbage and bean soup with homemade sourdough bread

I'm cooking some days, my son other days. Looking forward to a good week!

We had waffles (topped with strawberries for me) and sausage tonight for dinner.

I have started my grocery list for next week (my "weeks" run Wednesday to Wednesday) so I thought I would post my menu. Looks like a slightly more expensive week due to all the fresh vegetables! Ugh, there is always a down side to trying to eat well!

These are in no real order since I never know what will get made when due to weather and schedules.

Balsamic Glazed Salmon with Spring Rice Pilaf with Vegetables and Cheese
Meatball Subs and salad
BBQ Chicken on the grill with Potato, Onion, and Carrot packets and Rolls
Vegetable Soup and Grilled Cheese
 

Teresa, I LOVE reading your menu. We eat meatless quite a bit but not nearly as creatively as you. :)

I need to write this out quick for the week. Once I have put it in writing somewhere I find I am less likely to deviate from the plan or go out to get something.. so this post is the perfect spot.

Sunday .. lasagna, garlic bread, garden salad.

Monday.. beef stew in the crockpot for those who eat it, eggs on toast and fruit for those who don't

Tuesday.. Spaghetti Pie

Wednesday.. Whole wheat wraps, cheese, beans, veggies and sourcream

Thursday ..Pierogie, broccoli and cheese sauce

Friday.. Hamburgers and Veggie Burgers and green beans
 
Sun-Chicken Quesdillas
Mon-Breakfast for dinner (eggs and sausage)
Tues- Tacos
Wed- Chicken and Rice
Thurs- Grilled Cheese/soup
Fri-Pizza
Sat-Taco Salad
 
So I planned our week out. So in no particular order

-Chicken stirfry with rice
-french toast with bacon and fruit
-ground beef tacos with spanish rice
-spaghetti and meatballs
-angelhair pasta with roasted veggies
-chicken sausages with orzo pasta sala
 
If you love restaurant food but want to cook at home more, I recommend the "Top Secret Recipes" books by Todd Wilbur (or you can buy individual recipes off his website for I think $0.79 each). He has cloned many of the greatest and most popular dishes from restaurants across America ... everything from Wendy's to P.F.Chang's to the famous Soup Nazi of Seinfeld fame.

The food tastes great and the books are also a great learning tool for people new to cooking because he explains basic steps very clearly, without being tedious or condescending. He makes tons of practical suggestions about where to find the ingredients and what substitutions you can make, also what kinds of pots and pans to use, etc.

Another advantage of cooking with cloned recipes from chain restaurants is that they happen to have spent millions of dollars developing recipes which taste spectacular but which have comparatively simple cooking steps so that a casual employee who has not trained at cordon-bleu chef's school can crank them out relatively easily.

Some of the dishes are heavy on cream, sugar, salt, cheese, fat, etc. but it is always possible to make these healthier if you wish, by making substitutions or omissions. One of his books contains nothing but healthier versions of many of his recipes. And plenty of the recipes are really healthy food, "as is".

A lot of these recipes are really, really going to WOW people when you cook them, and they aren't necessarily the most unhealthy or complicated recipes either.
 
Last night it was Tacos. That made enough for me to make a Taco salad for work today! Tonight it's canned soup and sandwiches. Tomorrow I'm roasting a Chicken in the slow cooker all day for yummy chicken tomorrow night.
 
yesterday is traditionally pasta for my family but I was lazy so resorted to pulling sauce from the freezer. Dh & dd#2 had vodka sauce and Dd#1 and I had traditional meat sauce. Served with salad and a loaf of warm french bread for dipping or buttering.

I had defrosted a lb of ground beef to make meatballs but in my laziness I didn't want to so I wound up browning it so Dh can use it for tacos later this week.

Dh will cook Mon- thurs
hamburgers
baked chicken and parmesean shell pasta
weds- is dd#2 bday so we will go to Chili's
taco's or hamburger helper using the browned ground beef from the freezer.

Friday I plan to make chicken piccata
saturday- ribs
sunday lasagna

Yesterday- although I was lazy in making fresh meat sauce- I tossed 1.5 lbs of chicken breasts into the crockpot with a large jar of salsa and made spanish rice in the crockpot. I now have several meals for work for myself. I also make sure that I add extra pasta to the water on sunday so I have a lunch or dinner to reheat at work.

I am taking the day off today! I had to work this AM and am feeling horrible! So today I am making good old fashioned cold tuna with pasta shells salad. Nothing fancy just something I can whip up fast and not worry. I am going to have some chicken soup for lunch and back to work this afternoon. yuck!

I ended up having french onion soup. I freeze it into little 1 cup baggies and add it to recipes like crock pot pot roast. I just defrosted it in the microwave.
Don't you hate when you take a can from the pantry and open it only to find out it's the wrong veggie! That's exactly what I did today even though the picture is clearly of green beans! I found some frozen green peas in my freezer though to add to my tuna and shells.

Not to freak you out, but I usually do my meal planning MONTHLY. Yes, it can change when I finally get to that week sometimes, but I would say it stays the same about 85% of the time. This week I actually made a change and added in the BBQ Chicken for a Mediterranean Chicken I had planned. I just really wanted BBQ Chicken!

I find it so much less stressful to have the plan. I know what I have to cook, I know what I have to buy at the store, and I don't have to waste time since i already have the plan.
 
I have some rough ideas. Not sure how it will pan out, but this is what I'm thinking for the week.


Thoughts:

* 3 cheese ravioli and cheese & garlic bread with a salad.
* Ham, cheese, & broccoli quiche with fruit and yogurt.
* Meatloaf and baked potatoes and green beans.
* Oven fried chicken, corn and pan fried apples
* Pizza. I haven't tried the pre-made crust w/yeast yet. I saw it at the grocery store for less than a dollar. I may pick that up this week.

Reality:

* Mon.- Ham steak, baked beans, corn. I forget what we had for dessert.
* Tue.- Shake and bake chicken, edamame, and rice. Whole wheat honey muffin for dessert.
* Wed.- Chili and cornbread. I may make an apple crisp. I added leftover rice and corn to the chili. I put it in a casserole dish and sprinkled shredded cheddar cheese over it. I'm calling it, "Spanish Chili". :) I hope everyone likes it. **Update- they loved it! We had butterscotch pudding for dessert.
* Thurs.- Leftover chili, cornbread, chocolate pudding w/ cookie crumbles.
* Fri.- Pizza! Yea! :)
 
Like many of you I also plan a monthly menu and it works really great for my family because many of these meals are ones that my DH and I make ahead of time and then freeze :thumbsup2 This weeks menu includes:

Monday-Chicken and Greek Salad
Tuesday-Southwestern Pasta Skillet
Wednesday-Curried Chicken and CousCous
Thursday-Manicotti
Friday-Baked Potatoes
Saturday-Dirty Rice
Sunday-Chili and Corn Bread

I find it easier to stick to a budget if I plan meals. I used to assign days to all of my meals but that was constantly backfiring so I come up with a six meals at a time and just check them off the list as we do them.

Tonight I am making some kind of chicken stirfry. Not exactly sure what flavor or what veggies I am adding in yet but something.
 
How does everyone prepare the chicken for recipes that call for cooked chicken chunks? I'd love to be able to make some ahead and freeze so that it's ready to go into recipes.
